Vanilla Sponge Cake
Here comes the weekend and is time to satisfy those taste buds with a delicacy. I always wanted to bake a sponge cake and got this yummy recipe from a good friend of mine. She was generous enough to share the recipe.It did turn out pretty soft and delightful to taste.Lets check out the recipe.

- 1 Cup White Sugar
- 1/2 Cup Melted Butter/Ghee
- 1 1/2 cups All Purpose Flour
- 1 3/4 tsp Baking Powder
- 2 Eggs
- 1/2 Cup Milk
- 2 tsp Vanilla Extract
- 1/4 cup mixed dry fruits
Instructions :
- Preheat oven to 350 F.
- In a bowl cream in sugar and melted butter/ghee.Keep stirring till sugar dissolves completely.
- Add in one egg at a time and keep whisking.
- Add Vanilla extract and continue stirring.
- Meanwhile in a separate bowl mix in baking powder and all purpose flour.
- Now slowly pour this mix in batches to the creamy mixture above and continue stirring.
- After few minutes of whisking pour in the milk and continue the process whisking.
- As you do this , you can observe mixture volume increases and becomes smooth.
- Take a baking tray and place parchment paper, apply butter or Ghee.
- Pour the creamy batter to the tray and put nuts on top.
- Bake for about 30-40 minutes.
- Use a tooth pick to check if it is cooked properly and let it cool and serve.
Note:
1)As i don't have a hand mixer i did with my hand.Whisking with hand mixer is easy.
2)The more you whisk , you get a more spongy cake.
3)Instead of Vanilla you can use any choice of flavors.
4)If you like a bit more sweet use 1 1/2 - 2 cup of sugar.
5)You can use any dry fruits of your choice.
