Vanilla Sponge Cake

Here comes the weekend and is time to satisfy those taste buds with a delicacy. I always wanted to bake a sponge cake and got this yummy recipe from a good friend of mine. She was generous enough to share the recipe.It did turn out pretty soft and delightful to taste.Lets check out the recipe.

Ingredients :

  1. 1 Cup White Sugar
  2. 1/2  Cup Melted Butter/Ghee
  3. 1 1/2 cups All Purpose Flour
  4. 1 3/4 tsp Baking Powder
  5.  2 Eggs
  6. 1/2 Cup Milk
  7. 2 tsp Vanilla Extract
  8. 1/4 cup mixed dry fruits
Instructions :
  1. Preheat oven to 350 F.
  2. In a bowl cream in sugar and melted butter/ghee.Keep stirring till sugar dissolves completely.
  3. Add in one egg at a time and keep whisking.
  4. Add Vanilla extract and continue stirring.
  5. Meanwhile in a separate bowl mix in baking powder and all purpose flour.
  6. Now slowly pour this mix in batches to the creamy mixture above and continue stirring.
  7. After few minutes of whisking pour in the milk and continue the process whisking.
  8. As you do this , you can observe mixture volume increases and becomes smooth.
  9. Take a baking tray and place parchment paper, apply butter or Ghee.
  10. Pour the creamy batter to the tray and put nuts on top.
  11. Bake for about 30-40 minutes.
  12. Use a tooth pick to check if it is cooked properly and let it cool and serve.










Note:

1)As i don't have a hand mixer i did with my hand.Whisking with hand mixer is easy.
2)The more you whisk , you get a more spongy cake.
3)Instead of Vanilla you can use any choice of flavors.
4)If you like a bit more sweet use 1 1/2 - 2 cup of sugar.
5)You can use any dry fruits of your choice.
